Curating Champagne for the Azur Allocation Members
I love bringing our members more than just incredible wines—I create experiences that connect them to the people, places, and traditions behind each bottle. Every year in Champagne, I collaborate with expert winemakers, many of whom have inherited their craft through generations. Working alongside them, I gain deeper insight into their methods, their vineyards, and the nuances that make each cuvée truly special.
With their expertise and my passion for discovery, I carefully curate a selection of rare, small-production champagnes that tell a story. These aren’t bottles found on store shelves; they are hidden gems, crafted with precision and tradition, waiting to be shared. The Art of Champagne: What Sets It Apart
While Champagne and other sparkling wines may share their effervescence, true Champagne stands in a league of its own. Here’s why:

1. Region & Appellation
Champagne can only be produced in the Champagne region of France, governed by strict regulations that preserve its quality and authenticity. Outside of this region, all other sparkling wines, including Prosecco (Italy) and Cava (Spain), fall under different classifications.
2. Traditional Method: The Craft of Champagne
Champagne is made using the Méthode Traditionnelle, a painstaking process where the wine undergoes a secondary fermentation inside the bottle to develop its signature bubbles. This method results in a finer, more persistent mousse, giving Champagne its silky, elegant texture.
3. Extended Aging for Complexity
Champagne’s aging process is rigorous—non-vintage Champagne must be aged at least 15 months, while vintage Champagnes require a minimum of three years. This extended contact with the lees (spent yeast) imparts nuanced notes of brioche, almond, and minerality, making it one of the most sophisticated sparkling wines in the world.
4. The Influence of Terroir & Grape Selection
The cool climate and chalky soils of Champagne create an environment where acidity, structure, and elegance thrive. The primary grapes—Chardonnay, Pinot Noir, and Pinot Meunier—each contribute distinct characteristics, forming a harmonious balance in the glass.

5. Champagne’s Signature Bubble Quality
Unlike mass-market sparkling wines, Champagne undergoes natural fermentation in-bottle, resulting in smaller, more persistent bubbles that create a smooth, creamy mouthfeel. These delicate bubbles elevate Champagne’s overall experience, adding layers of finesse.
